
Sabut Masoor Dal
Whole brown lentils simmered till creamy, ghee tadka mandatory. Comfort at a simmer — soft, turmeric-gold and ghee-slicked. Serve with steamed rice and a spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion2, finely sliced
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Green Lentils1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Rinse the green lentils in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

Beat the dal with a wire whisk until silky, adding hot water to a pouring consistency.

For the tadka, bloom cumin in ghee with dried red chilies until they swell and darken.

Add the onion to the pan and cook till jammy, then tip everything into the dal and simmer ten minutes so the flavours marry.

Swirl in a spoon of ghee, scatter cilantro and serve with lemon on the side.
Chef's tip
Salt the dal after it softens — early salt can keep the skins tough.
