
Hyderabadi Khatti Dal
Nizami tangy dal, tamarind-soured and tempered twice. Comfort at a simmer — soft, turmeric-gold and ghee-slicked. Pour over rice or dunk rotis straight into the bowl.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Garlic6 cloves
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Curry Leaves2 sprigs
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Tamarind Paste2 tbsp

- Fresh Cilantro2 tbsp, chopped

Wash the yellow lentils (toor dal), soak 30 minutes if you have time, then boil with turmeric and a drop of oil till it turns creamy.

Beat the dal with a wire whisk until silky, adding hot water to a pouring consistency.

Heat ghee in a small pan and crackle cumin with a pinch of asafoetida; add the onions and fry till golden.

Build a quick masala of the tamarind paste in the tadka pan, let it sizzle into the ghee, and stir it through the dal.

Swirl in a spoon of ghee, scatter cilantro and serve with lemon on the side.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
