Navratan Dal
Nine-lentils festival dal, rich enough to be a curry. The everyday pot of gold that anchors every Indian thali. Serve with steamed rice and a spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Chickpeas1 cup, soaked overnight
- Turmeric Powder1/2 tsp
- Kidney Beans1 cup, soaked overnight
- Yellow Moong Dal1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Cook the yellow moong dal in a generous amount of water with turmeric and salt, skimming the foam, until each grain surrenders.

Mash the dal lightly against the side of the pot; leave some texture.

Heat ghee in a small pan and crackle cumin with a pinch of asafoetida; add the onions and fry till golden.

Build a quick masala of the kidney beans in the tadka pan, let it sizzle into the ghee, and stir it through the dal.

Finish with a second tiny tadka — ghee, red chili powder, poured sizzling over the top — and a shower of cilantro.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
