Biulir Dal
Bengali white urad dal with fennel, made for basanti pulao pairing. Humble dal, done properly, beats most fancy curries. Pour over rice or dunk rotis straight into the bowl.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Urad Dal1 cup
- Fennel Seeds1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash the urad dal, soak 30 minutes if you have time, then boil with turmeric and a drop of oil till it turns creamy.

Mash the dal lightly against the side of the pot; leave some texture.

For the tadka, bloom cumin in ghee with dried red chilies until they swell and darken.

Fry tomato with the ginger until it collapses into the fat, then pour the whole thing over the simmering dal.

Swirl in a spoon of ghee, scatter cilantro and serve with lemon on the side.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
