
Kolhapuri Amti
Fiery Kolhapuri amti balanced with coconut and jaggery. The everyday pot of gold that anchors every Indian thali. Pour over rice or dunk rotis straight into the bowl.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Red Chili Powder1 tsp
- Grated Coconut1 cup
- Jaggery3/4 cup, grated
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Rinse the yellow lentils (toor dal) in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

Beat the dal with a wire whisk until silky, adding hot water to a pouring consistency.

Warm the ghee, drop in cumin and mustard seeds if using, and let them pop before the onions go in.

Fry tomato with the red chili powder until it collapses into the fat, then pour the whole thing over the simmering dal.

Swirl in a spoon of ghee, scatter cilantro and serve with lemon on the side.
Chef's tip
Salt the dal after it softens — early salt can keep the skins tough.
