Ela Ada
Rice-jaggery-coconut parcel steamed in banana leaf, Kerala's emoji snack. Fermented batter, hot pan, fifty-year-old technique — south Indian breakfast engineering at its best. Plate with tomato chutney and filter coffee alongside.
Ingredients
- Saltto taste
- Ginger1-inch piece

- Mustard Seeds1/2 tsp
- Curry Leaves1 sprig
- Asafoetidaa pinch
- Banana Leaves1 cup, chopped
- Coconut Oil2 tbsp
- Rice Flour1 cup
- Grated Coconut1 cup
- Jaggery3/4 cup, grated
Instructions

Wash and soak the grains and dal; grind soft, mix with salt and leave in a warm spot until the batter rises and smells faintly sour.

Loosen the batter to pouring consistency — think thick pancake batter, not glue.

Grease the pan lightly with a cut onion dipped in oil — the old non-stick trick.

Pour, spread with the back of the ladle in ever-widening circles, and trickle oil down the sides.

Cook till the underside is gold and lacy and the top loses its raw look, then flip or remove; serve immediately — they wait for no one.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
