
Kerala Mutta Dosa
Dosa with egg poured through the surface, roadside protein bomb. Fermented batter, hot pan, fifty-year-old technique — south Indian breakfast engineering at its best. Classic sides: molaga podi with sesame oil, and a bowl of sambar.
Ingredients
- Saltto taste
- Ginger1-inch piece
- Green Chili2
- Mustard Seeds1/2 tsp
- Curry Leaves2 sprigs
- Asafoetidaa pinch
- Eggs4
- Coconut Oil2 tbsp
- Rice Flour1 cup
Instructions

Grind the soaked rice and dal to a thick, fluffy batter — it should ribbon off the spoon — and ferment 8 hours.

Loosen the batter to pouring consistency — think thick pancake batter, not glue.

Get the pan properly hot; the first attempt tells you everything about the temperature.

Spoon the batter in, swirl or shape quickly, and let it set undisturbed for two minutes.

Wait for the edges to lift on their own, then flip for a minute more; serve hot with chutney and sambar.
Chef's tip
A pinch of sugar in the batter deepens the golden colour.
