Goan Chicken Cafreal
Goan cafreal, green herb-marinated chicken grilled smoky. The Sunday-special format that every region does differently. Serve with rice, rotis or buttered pav for the gravy.
Ingredients
- Chicken500 g, bone-in pieces
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Green Chili2
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Fresh Cilantro1/2 cup, chopped
- Lime2
- Red Chili Powder1-2 tsp
Optional extras
- Kasuri Methi1 tsp
Instructions

Give the chicken a quick marinade — salt, turmeric, chili — so it is seasoned to the bone, not the surface.

Brown the onions properly in hot oil, eight to ten minutes, till bronze and sweet.

Add ginger garlic paste, cook two minutes, then the tomato and ground spices; bhunao till the oil separates.

Stir the chicken and fresh cilantro into the masala, cook five minutes till coated, then add water and simmer.

Simmer till done — the meat should leave the bone without a fight — then finish with garam masala and cilantro.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
