Chicken Chaap
Kolkata's Awadhi-style chicken chaap, cooked in ghee till mahogany. Slow-fried masala meets quick-cooking chicken — timing is everything. Best with steamed rice and a cooling raita.
Ingredients
- Chicken500 g, bone-in pieces
- Yogurt2 cups, whisked
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Cashews1/4 cup
- Red Chili Powder1-2 tsp
- Poppy Seeds1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped

Season the chicken with salt and the ground spices, rub in ginger garlic paste, and let it sit while you build the rest.

Heat oil in a heavy pot and fry the onions till deeply golden — this is the gravy's backbone.

Build the masala: paste, tomato, powders — cook until thick, glossy and clearly done.

Turn the chicken through the masala with the yogurt, let it sear, then pour in warm water and cover.

Cook till the chicken is tender and the gravy coats a spoon; finish with garam masala, kasuri methi and cilantro.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
