Assamese Chicken Curry
Light Assamese chicken with potato and mustard oil, barely-spiced brilliance. Deep masala, tender chicken and gravy built for mopping. Best with steamed rice and a cooling raita.
Ingredients
- Chicken500 g, bone-in pieces
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Potato3 medium, cubed
- Red Chili Powder1-2 tsp
- Mustard Oil1 tsp
- Black Pepper1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped

Season the chicken with salt and the ground spices, rub in ginger garlic paste, and let it sit while you build the rest.

Heat oil in a heavy pot and fry the onions till deeply golden — this is the gravy's backbone.

Stir in the paste and green chilies, then tomato and spices, frying till the masala darkens and splits.

Turn the chicken through the masala with the potato, let it sear, then pour in warm water and cover.

Cook till the chicken is tender and the gravy coats a spoon; finish with garam masala, kasuri methi and cilantro.
Chef's tip
Bone-in chicken gives sweeter, deeper gravy — use it when you can.
