
Mushroom Aur Matar ki Bhaaji
Mushrooms and peas dry-tossed with ginger, the quick winter bhaaji of Punjab. The kind of homely bhaji that disappears fastest off the thali. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Green Peas1 cup
- Mushrooms250 g, quartered
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the mushrooms into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Add the mushrooms and the green peas, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
