
Chaman Aur Gobhi ki Curry
Paneer and cauliflower in turmeric-yogurt gravy, the Kashmiri winter curry. Restaurant comfort, home kitchen effort — the masala does the heavy lifting. Serve with jeera rice or flaky parathas.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1 tsp
- Vegetable Oil3 tbsp
- Cauliflower1 small, in florets
- Red Chili Powder1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Soften the onions over medium heat till they slump and turn bronze at the edges.

Stir in the ginger garlic paste and cook a full two minutes.

Tip in the tomato and the ground spices; bhunao until thick, glossy and the oil separates.

Turn the paneer through the masala with the cauliflower, add warm water and bring to a gentle simmer.

Finish with garam masala, a crush of kasuri methi and fresh cilantro; rest five minutes off the heat.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
