Chane ki Chilke ki Sabzi

Chickpea-skin stir fry with besan crumble, the zero-waste Ghar ka sabzi. The kind of homely bhaji that disappears fastest off the thali. Serve hot with rotis, dal and a wedge of lemon.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Green Chili2
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Lemon1
  • Green Beans2 cups, trimmed
  • Gram Flour1 cup
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Dice the green beans uniformly, toss with a pinch of salt and let it sit while the masala comes together.

    Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

    Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

    Fold in the green beans with the gram flour, sprinkle in a tablespoon of water, cover and steam until just done.

    Finish with garam masala, cilantro and a knob of butter for gloss.

Chef's tip

Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
