
Vazhaipoo Kuzhambu
Plantain flower in tamarind kuzhambu, the Tamil Nadu temple-town speciality. Slow-built masala, soft centres and a gravy that clings to the spoon. Best with buttered rotis and a cold kachumber salad.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Curry Leaves2 sprigs
- Tamarind Paste2 tbsp
- Mixed Vegetables2 cups, chopped
- Red Chili Powder1 tsp
- Grated Coconut1 cup
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Soften the onions over medium heat till they slump and turn bronze at the edges.

Add ginger garlic paste with a splash of water and scrape up the browned bits.

Tip in the tomato and the ground spices; bhunao until thick, glossy and the oil separates.

Turn the mixed vegetables through the masala with the tamarind paste, add warm water and bring to a gentle simmer.

Swirl in cream or a spoon of whisked yogurt off the flame, then shower with cilantro.

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
