
Paper Ghee Roast Dosa
Paper dosa roasted in a slick of ghee until it crackles, the Tirupati tiffin-room order. The batter does the work; the pan does the magic. Plate with tomato chutney and filter coffee alongside.
Ingredients
- Saltto taste
- Ginger1-inch piece
- Green Chili2
- Ghee3 tbsp
- Rice3/4 cup
- Potato3 medium, cubed
- Mustard Seeds1/2 tsp
- Curry Leaves1 sprig
- Asafoetidaa pinch
- Coconut Oil2 tbsp
Instructions

Grind the soaked rice and dal to a thick, fluffy batter — it should ribbon off the spoon — and ferment 8 hours.

Stir the fermented batter gently; it should be thick but pourable. Add a splash of water only if needed.

Get the pan properly hot; the first attempt tells you everything about the temperature.

Pour, spread with the back of the ladle in ever-widening circles, and trickle oil down the sides.

Cook till the underside is gold and lacy and the top loses its raw look, then flip or remove; serve immediately — they wait for no one.

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
