Pesarattu Aur Upma

🇮🇳 Indian

Green-moong pesarattu wrapped around upma, the Andhra tiffin called MLU. The batter does the work; the pan does the magic. Plate with tomato chutney and filter coffee alongside.

Prep 37 min Cook 14 min Serves 2 Medium

Ingredients

  • Saltto taste
  • Onion2, finely sliced
  • Ginger2-inch piece
  • Green Chili2
  • Mustard Seeds1/2 tsp
  • Curry Leaves1 sprig
  • Asafoetidaa pinch
  • Coconut Oil2 tbsp
  • Green Lentils1 cup

Instructions

  1. 1

Wash and soak the grains and dal; grind soft, mix with salt and leave in a warm spot until the batter rises and smells faintly sour.

  2. 2

Loosen the batter to pouring consistency — think thick pancake batter, not glue.

  3. 3

Get the pan properly hot; the first attempt tells you everything about the temperature.

  4. 4

Pour, spread with the back of the ladle in ever-widening circles, and trickle oil down the sides.

  5. 5

Wait for the edges to lift on their own, then flip for a minute more; serve hot with chutney and sambar.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
