Twice-fried wings with a shatter-crisp crust and sticky gochujang glaze — sweet, spicy, and dangerously snackable.

Ingredients
- Honey2 tbsp
- Salt1 tsp
- Garlic3 cloves, minced
- All-Purpose Flour1/4 cup
- Soy Sauce2 tbsp
- Cornstarch1/2 cup
- Chicken Wings1 kg
- Rice Vinegar1 tbsp
- Neutral Oilfor deep frying
- Gochujang3 tbsp
Optional extras
- Spring Onions2, sliced
- Sesame Seeds1 tbsp
Instructions

Toss chicken wings with salt, pepper and a light cornstarch-flour dredge.

Fry at 160°C for 8 minutes; drain and rest 5 minutes.

Crank oil to 180°C and fry again 4–5 minutes until deep gold and glassy.

Simmer gochujang, honey, soy, garlic and a splash of vinegar into a shiny glaze.

Toss hot wings in the glaze; finish with sesame seeds and spring onions.
Chef's tip
The double fry is non-negotiable — first cooks through, second builds the glass crust.
