
Margherita Pizza
Naples in its purest form — blistered crust, sweet tomato sauce, milky mozzarella and torn basil in the colours of the Italian flag.
Ingredients
- Saltpinch for sauce
- Garlic1 clove, grated into sauce
- Pizza Dough400 g, room temperature
- Mozzarella Cheese250 g, torn
- Tomato Sauce1 cup
- Fresh Basil10 leaves
- Olive Oil2 tbsp
- Parmesan Cheese2 tbsp, grated
Instructions

Preheat the oven to its maximum temperature (250°C+ / 480°F+) with a pizza stone or upside-down tray inside for 30 minutes.

Stretch the dough gently from the centre outward, leaving a 2 cm border. Never use a rolling pin — it kills the air bubbles.

Spread a thin layer of tomato sauce mixed with grated garlic and salt. Leave the border clean.

Scatter torn mozzarella evenly, drizzle with olive oil.

Slide onto the hot stone and bake 8-12 minutes until the crust is charred and blistered in spots.

Top with fresh basil and a final drizzle of olive oil immediately after baking. Slice and serve at once.
Chef's tip
Adding basil after baking keeps it bright green and aromatic instead of bitter and burnt.
