
Chicken Chow Mein
Springy egg noodles tossed with velveted chicken and crisp vegetables in a glossy soy-oyster sauce — takeaway magic at home.
Ingredients
- Chicken300 g, thinly sliced
- Garlic3 cloves, minced
- Vegetable Oil2 tbsp
- Bell Pepper1, sliced
- Carrot1, julienned
- Cabbage2 cups, shredded
- Spring Onions3, cut into batons
- Soy Sauce3 tbsp
- Sesame Oil1 tsp
- Chow Mein Noodles300 g, fresh
- Oyster Sauce2 tbsp
- Cornstarch1 tbsp (velvet the chicken)
Instructions

Toss chicken slices with 1 tbsp soy sauce and the cornstarch. Rest 15 minutes — this velveting keeps the meat silky.

Boil noodles until just springy (1-2 minutes for fresh). Drain, rinse cold and toss with a few drops of oil.

Sear the chicken in a very hot wok with 1 tbsp oil until golden. Remove.

Stir-fry garlic, then all the vegetables on maximum heat for 2 minutes — they should stay crunchy.

Add noodles, chicken, remaining soy sauce and oyster sauce. Toss constantly for 2 minutes until everything is glossy and coated.

Finish with sesame oil and spring onions. Serve straight from the wok.
