
Pork Dumplings (Jiaozi)
Plump handmade dumplings with juicy ginger-perfumed pork filling, pan-steamed until the bottoms are golden and crisp.
Ingredients

- Garlic3 cloves, minced
- Ginger1 tbsp, grated
- Eggs1
- Cabbage2 cups, finely shredded
- Spring Onions4, minced
- Soy Sauce3 tbsp
- Sesame Oil1 tbsp
- White Pepper1/2 tsp
- Vinegar4 tbsp (for dipping)
- Ground Pork500 g
- Dumpling Wrappers40
Instructions

Salt the shredded cabbage and rest 10 minutes, then squeeze out the water hard. Dry filling = juicy dumplings.

Mix pork, squeezed cabbage, spring onions, garlic, ginger, soy sauce, sesame oil, egg, white pepper and salt in one direction until sticky.

Place 1 tbsp filling in each wrapper. Wet the edge, fold and pleat firmly to seal — air pockets burst during cooking.

For potstickers: fry dumplings flat-side down in oil until golden, about 2 minutes.

Pour in 1/2 cup water, cover immediately and steam 6-8 minutes until the water evaporates.

Uncover and crisp the bottoms 1 more minute. Serve with vinegar dipping sauce.
