A humble, fast and perfect morning dish: ghee, curry leaves and comfort in one pan. 20 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Onion1
- Green Chili1
- Ghee2 tbsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Lemon1
- Semolina (Rava)1.5 cups
Instructions

Dry-roast the semolina (rava) until it smells toasty, then set aside.

In ghee, pop mustard seeds, then fry onion, green chili and curry leaves to soft gold.

Fold in the semolina (rava) with salt — gently, so it stays whole.

Pour in double its volume of hot water, stir once, cover, and cook 8 minutes on low.

Finish with lemon, cilantro and an extra spoon of ghee.
