The 15-minute breakfast that powers half of India — soft, lemony, tempered with mustard and curry leaves. Gives you a proper meal in 20 minutes.

Ingredients

  • Saltto taste
  • Onion1
  • Green Chili1
  • Ghee2 tbsp
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Lemon1
  • Flattened Rice (Poha)1.5 cups

Instructions

    Rinse the flattened rice (poha) briefly and let it drain — it should be plump but not soggy.

    In ghee, pop mustard seeds, then fry onion, green chili and curry leaves to soft gold.

  3. 3

    Fold in the flattened rice (poha) with salt — gently, so it stays whole.

    Toss 2-3 minutes on a low flame so every flake turns golden-tinged.

    Finish with lemon, cilantro and an extra spoon of ghee.
