Ingredients
- Yogurt1 cup
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Turmeric Powder1/2 tsp
- All-Purpose Flour2 cups
- Tamarind Paste3 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1 tsp
Optional extras
- Mint Leavesfor the hari chutney
- Fresh Cilantrofor the hari chutney
- Jaggery1 tbsp, for the meethi chutney
Instructions

Knead a firm dough (or pastry) and rest it 20 minutes.

Cook the filling dry — no moisture, or the pastry weeps — and cool it completely.

Stuff, shape and fry on a medium flame so the inside cooks through as the outside crisps.

Serve with meethi and hari chutney; break one open for the steam.
Chef's tip
Make both chutneys ahead; they keep a week in the fridge and improve overnight.
