Moong Dal Halwa

A ghee-rich halwa cooked low and slow until the fat separates and the spoon stands happily in it. Ready in 50 minutes including prep.

Ingredients
- Ghee3 tbsp
- Yellow Lentils (Toor Dal)1.5 cups, prepared
- Sugar1 cup
Optional extras
- Golden Raisins2 tbsp
- Almonds2 tbsp, slivered
- Green Cardamom3, crushed
Instructions

Roast the yellow lentils (toor dal) in ghee on a patient medium flame until it smells toasty and turns a shade deeper.

Pour in the hot liquid (milk or water) carefully — it will splutter — and stir through.

Add sugar and keep folding until the ghee separates and gleams at the edges.

Finish with cardamom, almonds and raisins; serve warm.
