A one-pot rice classic — khara bhath is what Indian kitchens do with leftovers and do brilliantly. About 30 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Ghee3 tbsp
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Green Peas1/2 cup
  • Carrot1, diced
  • Semolina (Rava)1.5 cups

Optional extras

  • Fresh Cilantroto finish

Instructions

    Cook the base until just done — separate grains for rice, soft mash for the rest.

    Heat ghee and crackle the mustard seeds, then the dal, until golden and nutty.

    Add the aromatics and curry leaves; fry until the kitchen smells like a temple kitchen.

    Fold everything through the base with the spices, off the boil, so nothing turns mushy.

    Finish with lemon and cilantro; serve warm or at room temperature.

Chef's tip

Day-old rice fries up drier and better — plan ahead if you can.
