- Finger Millet (Ragi)2 cups

Instructions

Bring the water to a rolling boil and sprinkle in the flour a fistful at a time, stirring hard to kill every lump.

Keep working the mixture over the heat until it thickens and turns glossy — mudde fights back, hold the spoon firmly.

Finish with the flavourings; the texture should hold a thumb-dent.

Serve hot with ghee, or chill and drink if the name says kanji or raab.
Chef's tip
Keep the flour fine and the stirring hard — lumps are the only failure mode.
