Bangaladumpa Vepudu
Golden Telugu potato fry dusted with chaat masala, the rice-pairing king. The kind of homely bhaji that disappears fastest off the thali. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Curry Leaves2 sprigs
- Chaat Masala1 tsp
- Red Chili Powder1 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash and cut the potato into even, bite-size pieces so everything cooks at the same pace.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Stir in ginger garlic paste and green chili; after a minute add the ground spices with a splash of water so they don't scorch.

Add the potato and the roasted cumin, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
If the sabzi tastes flat, it usually wants salt and lemon, not more chili.
