
Vazhakka Mezhukkupuratti
Raw banana dry-fried in coconut oil with shallots, Kerala's answer to fries. Simple, spiced straight-talk food — no gravy to hide behind. Best mopped up with hot chapatis straight off the flame.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Curry Leaves2 sprigs
- Shallots10, halved
- Red Chili Powder1 tsp
- Coconut Oil1 cup, chopped
- Green Banana2, boiled and peeled
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Pat the green banana dry and chop it into similar-sized chunks — dry surfaces brown better.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Add the green banana and the shallots, toss to coat in the masala, cover and cook on low, stirring twice, until tender.

Kill the heat, stir through the cilantro and the coconut oil, and rest five minutes before serving.
Chef's tip
A pinch of sugar balances tomatoes that lean too sharp.
