Chikkudukaya Vepudu

Telugu broad bean fry with garlic and coconut, crisp and garlicky. Simple, spiced straight-talk food — no gravy to hide behind. Serve hot with rotis, dal and a wedge of lemon.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Garlic6 cloves
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Coriander Powder1 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil2 tbsp
  • Curry Leaves2 sprigs
  • Green Beans2 cups, trimmed
  • Red Chili Powder1 tsp
  • Grated Coconut1 cup

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Wash and cut the green beans into even, bite-size pieces so everything cooks at the same pace.

    Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

    Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

    Turn the green beans through the masala with the grated coconut, clamp on a lid and let the steam work — check after 10 minutes.

    Finish with garam masala, cilantro and a knob of butter for gloss.

Chef's tip

If the sabzi tastes flat, it usually wants salt and lemon, not more chili.
