
Pavakka Theeyal
Kerala bitter gourd in roasted coconut-tamarind gravy, dark and smoky. Slow-built masala, soft centres and a gravy that clings to the spoon. Serve with jeera rice or flaky parathas.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Shallots10, halved
- Tamarind Paste2 tbsp
- Red Chili Powder1 tsp
- Grated Coconut1 cup
- Bitter Gourd3, sliced
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Heat oil in a heavy pot and brown the onions deeply — this patience is the whole flavour base.

Add ginger garlic paste with a splash of water and scrape up the browned bits.

Add the tomato with turmeric, chili and coriander powder; fry till the masala darkens and splits.

Turn the bitter gourd through the masala with the grated coconut, add warm water and bring to a gentle simmer.

Swirl in cream or a spoon of whisked yogurt off the flame, then shower with cilantro.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
