Karnataka eggplant curry with a three-seed masala, nutty and deep. Restaurant comfort, home kitchen effort — the masala does the heavy lifting. Serve with jeera rice or flaky parathas.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1 tsp
  • Saltto taste
  • Onion2, finely chopped
  • Tomato3, chopped
  • Green Chili2, slit
  • Coriander Powder2 tsp
  • Turmeric Powder1/2 tsp
  • Vegetable Oil3 tbsp
  • Peanuts1/2 cup, roasted
  • Eggplant2 medium (300 g), cubed
  • Red Chili Powder1 tsp
  • Sesame Seeds1 tsp
  • Poppy Seeds1 tsp

Optional extras

  • Kasuri Methi1 tsp
  • Fresh Cilantro2 tbsp, chopped

Instructions

    Fry the onions with a pinch of salt till deep golden; eight to ten minutes, and worth every one.

    Add ginger garlic paste with a splash of water and scrape up the browned bits.

    Add the tomato with turmeric, chili and coriander powder; fry till the masala darkens and splits.

    Add the eggplant with the poppy seeds, coat well, pour in hot water to just cover and simmer till tender.

    Finish with garam masala, a crush of kasuri methi and fresh cilantro; rest five minutes off the heat.

Chef's tip

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
