
Palakura Pappu
Spinach dal the Andhra way, iron-rich and ghee-tempered. The everyday pot of gold that anchors every Indian thali. Serve with steamed rice and a spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Spinach300 g, chopped
- Onion1, finely chopped
- Tomato3, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Tamarind Paste2 tbsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Rinse the spinach in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

Mash the dal lightly against the side of the pot; leave some texture.

For the tadka, bloom cumin in ghee with dried red chilies until they swell and darken.

Build a quick masala of the yellow lentils (toor dal) in the tadka pan, let it sizzle into the ghee, and stir it through the dal.

Finish with a second tiny tadka — ghee, red chili powder, poured sizzling over the top — and a shower of cilantro.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
