
Odia Dalma
Jagannath temple dalma — dal with vegetables and coconut, prasad flavour. Comfort at a simmer — soft, turmeric-gold and ghee-slicked. Pour over rice or dunk rotis straight into the bowl.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Mixed Vegetables1 cup, chopped
- Pumpkin300 g, cubed
- Grated Coconut1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash the yellow lentils (toor dal), soak 30 minutes if you have time, then boil with turmeric and a drop of oil till it turns creamy.

Whisk the cooked dal till smooth-ish and keep it loose — it thickens as it sits.

For the tadka, bloom cumin in ghee with dried red chilies until they swell and darken.

Build a quick masala of the mixed vegetables in the tadka pan, let it sizzle into the ghee, and stir it through the dal.

Taste for salt and sourness; a squeeze of lemon at the end makes the dal taste of itself, only louder.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
