Gongura Pappu
Andhra sorrel-leaf dal with a tart edge that wakes up plain rice. The everyday pot of gold that anchors every Indian thali. Pour over rice or dunk rotis straight into the bowl.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion2, finely sliced
- Tomato2, chopped
- Green Chili2
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Gongura (Sorrel Leaves)2 cups, packed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Rinse the gongura (sorrel leaves) in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

Whisk the cooked dal till smooth-ish and keep it loose — it thickens as it sits.

Heat ghee in a small pan and crackle cumin with a pinch of asafoetida; add the onions and fry till golden.

Add the yellow lentils (toor dal) to the pan and cook till jammy, then tip everything into the dal and simmer ten minutes so the flavours marry.

Finish with a second tiny tadka — ghee, red chili powder, poured sizzling over the top — and a shower of cilantro.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
