Dosakaya Pappu

🇮🇳 Indian

Yellow cucumber dal, Telugu summer special with gentle crunch. Humble dal, done properly, beats most fancy curries. Pour over rice or dunk rotis straight into the bowl.

Prep 12 min Cook 26 min Serves 3 Medium

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato3, chopped
  • Green Chili2
  • Cumin Seeds1 tsp
  • Ghee2 tbsp
  • Turmeric Powder1/2 tsp
  • Yellow Lentils (Toor Dal)1 cup, rinsed
  • Cucumber1, diced

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

  1. 1

Rinse the cucumber in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

  2. 2

Beat the dal with a wire whisk until silky, adding hot water to a pouring consistency.

  3. 3

For the tadka, bloom cumin in ghee with dried red chilies until they swell and darken.

  4. 4

Add the yellow lentils (toor dal) to the pan and cook till jammy, then tip everything into the dal and simmer ten minutes so the flavours marry.

  5. 5

Finish with a second tiny tadka — ghee, red chili powder, poured sizzling over the top — and a shower of cilantro.

Chef's tip

Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
