Panchmel Dal
Five lentils in one pot, Rajasthan's protein answer to dry desert heat. Comfort at a simmer — soft, turmeric-gold and ghee-slicked. Perfect with jeera rice and papad on the side.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Ginger2-inch piece
- Green Chili2
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Yellow Lentils (Toor Dal)1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash the yellow lentils (toor dal), soak 30 minutes if you have time, then boil with turmeric and a drop of oil till it turns creamy.

Beat the dal with a wire whisk until silky, adding hot water to a pouring consistency.

For the tadka, bloom cumin in ghee with dried red chilies until they swell and darken.

Fry tomato with the green chili until it collapses into the fat, then pour the whole thing over the simmering dal.

Swirl in a spoon of ghee, scatter cilantro and serve with lemon on the side.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
