
Sindhi Seyal Dal
Sindhi seyal dal simmered till thick and glossy. Comfort at a simmer — soft, turmeric-gold and ghee-slicked. Serve with steamed rice and a spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato3, chopped
- Ginger2-inch piece
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Tamarind Paste2 tbsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash the yellow lentils (toor dal), soak 30 minutes if you have time, then boil with turmeric and a drop of oil till it turns creamy.

Whisk the cooked dal till smooth-ish and keep it loose — it thickens as it sits.

Heat ghee in a small pan and crackle cumin with a pinch of asafoetida; add the onions and fry till golden.

Fry tomato with the tomato until it collapses into the fat, then pour the whole thing over the simmering dal.

Swirl in a spoon of ghee, scatter cilantro and serve with lemon on the side.
Chef's tip
The final sizzling tadka poured over the top is non-negotiable; it is the aroma.
