
Kairi Aur Moong Dal
Raw mango moong dal, summer sourness meeting soft dal. The everyday pot of gold that anchors every Indian thali. Pour over rice or dunk rotis straight into the bowl.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Green Mango1, peeled and grated
- Jaggery3/4 cup, grated
- Yellow Moong Dal1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped

Rinse the yellow moong dal in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

Beat the dal with a wire whisk until silky, adding hot water to a pouring consistency.

For the tadka, bloom cumin in ghee with dried red chilies until they swell and darken.

Fry tomato with the green mango until it collapses into the fat, then pour the whole thing over the simmering dal.

Taste for salt and sourness; a squeeze of lemon at the end makes the dal taste of itself, only louder.
Chef's tip
Too thick? Loosen with hot water, never cold.
