Andhra raw-mango pappu, the Ugadi dal everyone waits for. The everyday pot of gold that anchors every Indian thali. Pour over rice or dunk rotis straight into the bowl.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Green Chili2
  • Cumin Seeds1 tsp
  • Ghee3 tbsp
  • Turmeric Powder1/2 tsp
  • Yellow Lentils (Toor Dal)1 cup, rinsed
  • Green Mango1, peeled and grated

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Rinse the yellow lentils (toor dal) in several changes of water till it runs clear, then pressure-cook with turmeric, salt and plenty of water until completely soft.

    Whisk the cooked dal till smooth-ish and keep it loose — it thickens as it sits.

    Warm the ghee, drop in cumin and mustard seeds if using, and let them pop before the onions go in.

    Build a quick masala of the green mango in the tadka pan, let it sizzle into the ghee, and stir it through the dal.

    Finish with a second tiny tadka — ghee, red chili powder, poured sizzling over the top — and a shower of cilantro.

Chef's tip

The final sizzling tadka poured over the top is non-negotiable; it is the aroma.
