
Nariyal Wali Dal
Coconut-loaded moong dal, coastal tadka energy. The everyday pot of gold that anchors every Indian thali. Serve with steamed rice and a spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Mustard Seeds1 tsp
- Curry Leaves2 sprigs
- Grated Coconut1 cup
- Yellow Moong Dal1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash the yellow moong dal, soak 30 minutes if you have time, then boil with turmeric and a drop of oil till it turns creamy.

Mash the dal lightly against the side of the pot; leave some texture.

For the tadka, bloom cumin in ghee with dried red chilies until they swell and darken.

Fry tomato with the grated coconut until it collapses into the fat, then pour the whole thing over the simmering dal.

Swirl in a spoon of ghee, scatter cilantro and serve with lemon on the side.
Chef's tip
Taste as you go โ chili heat, salt and sourness should all lift each other, not fight.
