Red dal bloomed with kalonji in ghee, five-minute Bengali magic. Humble dal, done properly, beats most fancy curries. Pour over rice or dunk rotis straight into the bowl.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Saltto taste
  • Onion1, finely chopped
  • Tomato2, chopped
  • Ginger2-inch piece
  • Green Chili1-2, slit
  • Cumin Seeds1 tsp
  • Ghee3 tbsp
  • Turmeric Powder1/2 tsp
  • Red Lentils1 cup, rinsed
  • Nigella Seeds (Kalonji)1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Wash the red lentils, soak 30 minutes if you have time, then boil with turmeric and a drop of oil till it turns creamy.

    Mash the dal lightly against the side of the pot; leave some texture.

    Heat ghee in a small pan and crackle cumin with a pinch of asafoetida; add the onions and fry till golden.

    Fry tomato with the nigella seeds (kalonji) until it collapses into the fat, then pour the whole thing over the simmering dal.

    Finish with a second tiny tadka — ghee, red chili powder, poured sizzling over the top — and a shower of cilantro.

Chef's tip

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
