Rajasthani Bajra Khichdi
Rajasthani bajra khichdi, winter warmth in a bowl. The original comfort food: rice and dal melting into each other. Serve hot with papad, pickle and a big spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato1, chopped
- Ginger2-inch piece
- Green Chili1, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Asafoetidaa pinch
- Pearl Millet (Bajra)1 cup
- Yellow Moong Dal1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped

Wash the rice and pearl millet (bajra) in several changes of water, then let them soak while the tempering comes together.

Heat ghee in a pressure cooker and crackle cumin with a pinch of asafoetida.

Brown the onion lightly, stir in ginger garlic paste, then the tomato and spices with a splash of water.

Add the drained rice and pearl millet (bajra), stir gently for a minute, then pour in 4 cups of water and salt.

Cook on high heat for the first whistles, then low for ten minutes; open, stir vigourously — it should be soft and loose — and finish with ghee.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
