
Maharashtrian Jowar Khichdi
Maharashtrian jowar khichdi, millet comfort with peanut crunch. The original comfort food: rice and dal melting into each other. Serve hot with papad, pickle and a big spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato1, chopped
- Green Chili1, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Asafoetidaa pinch
- Peanuts1/2 cup, roasted
- Sorghum (Jowar)1 cup
- Yellow Moong Dal1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Combine the rice and sorghum (jowar), rinse twice, and keep them ready in a bowl.

Warm the ghee, drop in cumin seeds and let them darken a shade before anything else.

Soften the onion, add the paste and tomato with turmeric, and cook until the tomato splits.

Add the drained rice and sorghum (jowar), stir gently for a minute, then pour in 4 cups of water and salt.

Pressure-cook for 3 whistles (or simmer covered till mushy-soft), rest, then stir well and top with ghee, cilantro and crispy fried onions.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
