
Bengali Khichuri
Rainy-day bhoger khichuri with cauliflower and peas, pujo essential. One-pot, gentle-spiced and ready in half an hour. Top with fried onions and yogurt for the full experience.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato1, chopped
- Green Chili1, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Rice2 cups
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Asafoetidaa pinch
- Cauliflower1 small, in florets
- Green Peas1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Combine the rice and rice, rinse twice, and keep them ready in a bowl.

Warm the ghee, drop in cumin seeds and let them darken a shade before anything else.

Brown the onion lightly, stir in ginger garlic paste, then the tomato and spices with a splash of water.

Tumble in the rice and rice, coat in the masala, add water (1:4) and bring to a boil.

Cook on high heat for the first whistles, then low for ten minutes; open, stir vigourously — it should be soft and loose — and finish with ghee.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
