Ragi Sangati
Rayalaseema ragi ball porridge, farmer strength from finger millet. The original comfort food: rice and dal melting into each other. Top with fried onions and yogurt for the full experience.
Ingredients
- Ginger Garlic Paste1 tsp
- Salt1 tsp
- Onion1, finely chopped
- Tomato1, chopped
- Green Chili1, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Rice2 cups
- Asafoetidaa pinch
- Finger Millet (Ragi)1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash the rice and finger millet (ragi) in several changes of water, then let them soak while the tempering comes together.

Heat ghee in a pressure cooker and crackle cumin with a pinch of asafoetida.

Brown the onion lightly, stir in ginger garlic paste, then the tomato and spices with a splash of water.

Tumble in the rice and finger millet (ragi), coat in the masala, add water (1:4) and bring to a boil.

Let the cooker release naturally, beat the khichdi with a ladle till creamy, and serve swimming in extra ghee.
Chef's tip
Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
