Paneer Angara

Angry red paneer curry, the coal-sparked Kolhapuri cousin. The dish vegetarians order at restaurants and make better at home. Serve with naan, paratha or jeera rice.

Ingredients

  • Ginger Garlic Paste1 tbsp
  • Garam Masala1/2 tsp
  • Butter2 tbsp
  • Saltto taste
  • Paneer250 g, cubed
  • Onion2, finely chopped
  • Tomato3, chopped
  • Green Chili1
  • Turmeric Powder1/2 tsp
  • Cashews1/4 cup
  • Red Chili Powder1 tsp

Optional extras

  • Heavy Cream2 tbsp
  • Kasuri Methi1 tsp
  • Fresh Cilantro2 tbsp, chopped

Instructions

    Cube the paneer and keep it in warm water while the masala builds — this keeps it tender.

    Soften the onions slowly — paneer gravies reward gentle beginnings.

    Add tomato and the ground spices; cook till the masala thickens and the oil separates at the edges.

    Add the red chili powder, then the paneer, and turn it through the masala with a flat hand.

    Two minutes of simmering, a swirl of cream, a crush of kasuri methi, done.

Chef's tip

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
