Kolkata's white rezala, pepper-warm and almond-soft. Soft paneer, rich masala — the vegetarian crown jewel. Best with something soft — malabar parotta is ideal.

Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter2 tbsp
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, pureed
- Green Chili1
- Turmeric Powder1/2 tsp
- Cashews1/4 cup
- Red Chili Powder1 tsp
- Black Pepper1 tsp
Optional extras
- Heavy Cream2 tbsp
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Cube the paneer and keep it in warm water while the masala builds — this keeps it tender.

Brown the onions in butter, add the paste, and cook till the kitchen smells sweet and nutty.

Add tomato and the ground spices; cook till the masala thickens and the oil separates at the edges.

Stir in the yogurt, lower the heat, and slide the paneer in with care.

Rest off the heat, finish with the cashews, and serve while it's glossy.
Chef's tip
Soaking in warm salted water keeps it soft to the last bite.
