
Hara Masala Paneer
Green masala paneer, herb-blitzed and vivid. Soft paneer, rich masala — the vegetarian crown jewel. Best with something soft — malabar parotta is ideal.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter2 tbsp
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, pureed
- Green Chili2
- Turmeric Powder1/2 tsp
- Mint Leaves1/4 cup
- Fresh Cilantro1/2 cup, chopped
- Red Chili Powder1 tsp
Optional extras
- Heavy Cream2 tbsp
- Kasuri Methi1 tsp
Instructions

Slice the paneer thick enough to stay proud in the gravy; warm-soak and drain.

Heat butter or oil and fry the onions till golden; add ginger garlic paste and cook out the rawness.

Add tomato and the ground spices; cook till the masala thickens and the oil separates at the edges.

Add the fresh cilantro, then the paneer, and turn it through the masala with a flat hand.

Simmer three minutes — no more — finish with cream or crushed kasuri methi, and serve garnished with cilantro.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
