
Paneer Lababdar
Paneer lababdar, half-puree half-cube texture game stronger than tikka masala. Soft paneer, rich masala — the vegetarian crown jewel. Serve with naan, paratha or jeera rice.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter3 tbsp
- Tomato Puree400 g
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, pureed
- Green Chili1
- Turmeric Powder1/2 tsp
- Cashews1/4 cup
- Red Chili Powder1 tsp
Optional extras
- Heavy Cream2 tbsp
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Cube the paneer and keep it in warm water while the masala builds — this keeps it tender.

Soften the onions slowly — paneer gravies reward gentle beginnings.

Add tomato and the ground spices; cook till the masala thickens and the oil separates at the edges.

Add the tomato puree if using, then the drained paneer; fold gently — paneer breaks if bullied.

Rest off the heat, finish with the butter, and serve while it's glossy.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
