
Hari Mirch Ka Achar
Green chilli pickle, the warning label is optional. The condiment that carries the meal — bright, punchy and made in minutes. Keeps three days refrigerated; tempering on top keeps it fresher.

- Green Chili2
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies2
- Asafoetidaa pinch
- Lemon1
- Tamarind Paste1 tbsp
- Mustard Oil1 tsp
- Coconut Oil1 tbsp
Instructions

Get everything ready: fresh coconut or the green chili prepped, spices within reach — chutney takes minutes.

Briefly warm the mustard seeds in a dry pan until the kitchen smells like it means it.

Grind the green chili with the mustard seeds, tamarind, green chilies and salt to a texture you like — smooth or rustic.

Taste and adjust — salt, sour, heat; chutney should be slightly louder than the dish it accompanies.

Finish with a sizzling tempering: mustard seeds, curry leaves and dried red chilies poured over the top; stir in only at serving.

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
